Soil: Clay/silt, whit a good skeletal structure, high in organic substance, and a good nitrogen-carbon ratio. Higher in active limestone, which makes it ideal for the quality of the wines.
Cultivation of the vineyard: The vines are cultivated using biodynamic techniques. Only copper, sulphur and biodynamic preparations are used as defence against disease. We work to increase the humus through green manure and biodynamic soil preparations. No synthetic chemical products are used.
Harvest: The second half of October. Harvesting by hand selected bunches, which are placed on racks for natural drying that lasts about two months.
Grape variety: Sagrantino 100%.
Vinification: Prolonged fermentation with indigenous yeasts, without temperature control. After 15-20 days of fermentation on the skins, the wine is racked and the fermentation continues in oak barrels. Soft pressing with horizontal membrane press. The wine is then vinified and bottled without the addition of sulphur dioxide.
Ageing: Minimum 5 years in Slavonian oak casks.
Bottle ageing: Minimum 12 months. Marketed in 37.5cl bottles.
Tasting: Ruby red, with garnet reflections, clear, consistent. Extraordinary olfactory impact in terms of elegance and complexity, sweet, ethereal scents, with clear notes of morello cherry and wild berries. Each sip is a concentration of flavour, sweetness and structure.
Pairing suggestions: Umbrian rocciata, tozzetti with sultanas and almonds, mature cheeses, lamb.
Serving temperature: 18° - 20°C. Open two hours before serving.
